Vitamin A & D

VIn general, there are two categories of Vitamin A: one that comes from a plant food source, and the other from an animal food source. Retinol, an active type of Vitamin A, is found in animal sources, such as liver, whole milk, and some fortified foods.

Carotenoids, dark colored dyes found in plant foods that can turn into a form of Vitamin A, are an important source of this compound. One such carotenoid is beta-carotene, an important antioxidant that can protect cells from damage caused by unstable substances called free radicals.

There are two major forms of Vitamin D: Vitamin D2, or ergocalciferol, and Vitamin D3 or cholecalciferol. D2 is derived from plants and can substitute for D3 in the human body. D3 is the natural form found in foods and is made by the skin when exposed to sunlight.
